The Smith is a dry-processed coffee marked by its rich body, intense sweetness, and subtle acidity. Its current iteration is made up of coffee from Fazenda Sertão, in the Carmo de Minas region of Brazil.
Fazenda Sertão was planted by the first generation of coffee growers in the region. Since then, the Pereira family has shifted its focus from volume of production to quality of production. An important step to ensure this has been the planting of coffee at higher altitudes, as this protects the plant from environmental hazards and conduces to a more uniform ripening.
This lot is incredibly sweet: through milk, it is reminiscent of milk chocolate and almond; as a black, notes of berry jame and a soft winey acidity create a well-balanced cup.
